Recipe: bombay potatoes

Components

• four potatoes, peeled and cubed

• 3 tablespoons vegetable oil

• 1 teaspoon yellow mustard seeds

• 1 teaspoon cumin seeds

• 1 teaspoon ground turmeric

• 1 teaspoon floor coriander

• ½ teaspoon cayenne pepper, or to taste (optionally available)

• ½ teaspoon salt, or to taste

• three tablespoons minced onion

Instructions

1. Place cubed potatoes in a saucepan and cover with water. Cover with a lid and produce a boil over medium-high warmth. As soon as water is boiling, cook until potatoes are just soft, five to 10 mins. Drain well and set apart.

2. Warm oil in a big skillet over medium warmth. Add mustard seeds and cumin seeds and warmth until they begin to pop. Add turmeric, coriander, cayenne pepper, and salt. Cook dinner and stir till spices are aromatic, up to one minute, watching cautiously so spices do not burn. Upload onion and prepare dinner till softened, 2 to 3 mins.

3. Upload tired potatoes to the skillet and grow heat to medium-high. Cook and stir to thoroughly coat the potatoes with the spice mixture. flavor and season with extra salt, if preferred. Serve right now.
