300 g/10 oz lean beef fillet,
finely sliced
1 red onion, cut into thin
wedges
1-2 tablespoons thai green
curry paste
125 g/4 oz mangetout, thinly
sliced lengthways
150 ml/1/4 pint water
small bunch of basil leaves
Preheat a nonstick work or large frying pan. dry-fry the beef for 2 minutes, then remove with a slotted spoon, leaving the juices in the pan.
Reheat the pan and stir-fry for another minute or so. Now add the mangetout and water. Return the meat to the pan and stir-fry for a further 5 minutes. when the beef has cooked, throw in the basil and stir-fry for 30 seconds. Serve immediately with boiled, if liked.
