Ingredients for Andhra Chicken Fry Recipe

  • Chicken cut into 2 inch pieces on the bone 750 grams

  • Turmeric powder ¼ teaspoon

  • Red chilli powder 1 teaspoon

  • Coriander powder 2 teaspoons

  • Ginger-garlic paste 2 teaspoons

  • Salt to taste

  • Oil 2 tablespoons

  • Green chillies slit 2

  • Curry leaves 8-10

  • Onions sliced 3 large

  • Onion paste ½ cup

  • Fresh coriander leaves chopped 2 tablespoons

  • Spice powder

  • Cloves 2-3

  • Cinnamon ½ inch

  • Green cardamom 2-3

  • Black peppercorns 1 teaspoon

Method

Step 1

Grind cloves, cinnamon, green cardamoms and black peppercorns to a fine powder.

Step 2

Take chicken in a bowl. Add turmeric powder, chilli powder, coriander powder, ginger-garlic paste, the ground spice mix and salt. Mix well and set aside for 15-20 minutes.

Step 3

Heat oil in a non-stick pan. Add green chillies, curry leaves and onions and sauté till light golden.

Step 4

Add onion paste and sauté for 1minute. Add marinated chicken and sear on high heat for 2 minutes.

Step 5

Add ½ cup water, cover and cook for 10-12 minutes or till the chicken is fully done.

Step 6

Add coriander leaves, mix well and serve hot.
