Ingredients for Summer Vegetable Mix Recipe

  • Red capsicum cut into thin strips 1 medium

  • Yellow capsicum cut into thin strips 1 medium

  • Green capsicum cut into thin strips 1 medium

  • Zucchini sliced ½ cup

  • Yellow squash sliced ½ cup

  • Broccoli florets ½ cup

  • Oil 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Chipotle sauce 2 tablespoons

  • Salt to taste

  • Black pepper powder to taste

  • Jalapenos sliced 2 tablespoons

  • Onion sliced ¼ cup

  • coriander leaves chopped 2 tablespoons

Method

Step 1

Heat oil in a non-stick pan, add garlic, chipotle in adobo sauce, salt and pepper powder and sauté for 1 minute.

Step 2

Add jalapenos, onion, capsicums, zucchini and yellow squash and sauté lightly.

Step 3

Add broccoli and coriander leaves and toss to mix.

Step 4

Serve hot.
